RUSTIC PEACHES AND STRAWBERRIES GALETTE


The recipe is remarkably uncomplicated and utilizes ingredients that are likely to be readily available in your household. Abundant with fruit and enveloped in a luscious, buttery pastry, it represents the most effortless variety of pie that you can effortlessly prepare.

INGREDIENTS

Dough:

  • 150 grams oats flour (you can also use only all-purpose flour)
  • 150 grams All-Purpose Flour
  • 150 grams of butter
  • 2 teaspoons coconut sugar or stevia sugar
  • 1/4 teaspoon salt
  • 2 yolks
  • 3 tablespoons of cold water

Filling:

  • 500 g peaches
  • 100 g strawberries
  • 50 g coconut sugar or stevia sugar ( if you prefer sweeter you can add more)
  • 1 teaspoon of vanilla extract
  • 1 tablespoon tapioca starch (or any plant-based starch you have) it can be done also without

DIRECTIONS:

Dough:

To ensure the optimal texture and consistency of the dough, it is imperative that the ingredients remain cold throughout the process. It is recommended to store the butter in the refrigerator until ready to use.

In a medium-sized bowl, carefully combine the flour, salt, and sugar. Proceed by adding the cubed butter and swiftly incorporate it into the mixture using your fingertips, until a sandy dough is achieved. Gradually introduce the egg yolks, one at a time, ensuring thorough incorporation after each addition. Finally, pour in the cold water until the composition is well bound. If necessary, a small amount of flour may be added to achieve the desired consistency.

Cover the bowl containing the dough and refrigerate for approximately 30 minutes, allowing it to chill and set.

While the dough is chilling, preheat the oven to 180°C, ensuring that the rack is positioned in the middle.

Prepare a clean work surface by placing a large piece of parchment paper and lightly greasing it with oil. Gently transfer the chilled dough onto the parchment paper. Using a rolling pin, carefully roll out the dough into a uniform circle, approximately 0.5 cm thick and with a diameter of 27 cm, depending on the size of your tart tray. Place the rolled-out dough onto the tart tray, leaving a 1 cm border around the edge for proper shaping and presentation.

Filling:

1. Begin by cutting the peaches and strawberries into thick slices.
2. In a large bowl, combine the peaches, strawberries, sugar, vanilla extract, and starch. Toss together until well mixed.
3. Place the fruit mixture in the center of the dough, ensuring an even distribution.
4. Carefully fold the edges of the dough over the fruit, creating a rustic crust.
5. Brush the remaining beaten egg over the top of the crust, giving it a glossy finish.

Baking:

1. Preheat the oven and place the galette inside.
2. Bake for approximately 40 minutes, or until the crust turns a golden brown color and the filling begins to bubble.

Finishing:

1. Once baked, remove the galette from the oven and transfer it to a wire rack to cool.
2. Once cooled, slice the galette into portions.
3. For added indulgence, consider serving with whipped coconut cream or your favorite ice cream.
